The many faces of ground turkey

on February 26, 2013

Miles run this month: 39.8 miles

Miles left to reach 2013 goal: 1925.6 miles

The Mags and I signed up for the Chicago Women’s half marathon… our goal…

TO BE IN THE TOP TEN TEAMS!!!!

In order to finish in the top ten, looking at last years finish times, we both need to run a sub 2 half marathon. Small problem…

The extra lovin that has taken up residence on my booty.

I need to loose about 10 pounds and I think I will be able to cut at least 10 seconds off every mile. I doesn’t seem like a lot, but when you figure it will make my finish time over 2 minutes faster, that 2 minutes is the difference between 7th place and 12th place.

HELLO SALADS, YOU AND ME ARE GOING TO BE GREAT FRIENDS…

A pound of 97% lean ground turkey

77843431cd1c58fb87acf65918122fe85da536a5_r220_185_framedWhat can I do with that on a salad? A little bit of taco seasoning, cilantro, a can of black beans, and onion…BOOM…a salad topping…that lasted us 3 meals

Meal 1IMG_0828[1]

Ok so don’t look at all the yummy gooey cheese…look past that, there is Guac and the turkey is under the cheese!

Meal 2…

was breakfast and since I forgot to take a picture (hey it was 10am on a Sunday…give a girl a break!) We took the turkey mixture and scrambled some eggs, added tomatoes, cilantro and avacado…no cheese though! So super good.

Meal 3…

IMG_0832[1]yep no cheese… but it was really good with¬†avocados, tomatoes, cucumbers, and cilantro.

This idea of ground turkey is in the great idea file!
